One sandwich, done the Baltimore way

Pit beef is Baltimore's answer to barbecue: beef cooked hard over the pit, sliced thin as paper, and piled onto a roll while it's still steaming. It's rare outside Maryland. Now it's in Volusia County.

  1. Over the pit

    Whole top round, slow-smoked until the outside goes dark and crusty and the inside is still pink. That contrast is the whole point.

  2. Sliced to order

    Nothing sits in a warmer. Every sandwich is cut paper-thin on the slicer the moment you order it, so the beef is hot, juicy, and stacked loose.

  3. Stacked high

    Piled onto a kaiser roll until it barely closes. Ask for the super-size if you skipped lunch.

  4. Dressed your way

    Tiger sauce, straight horseradish, raw onion, mustard, or mayo. In Maryland the answer is tiger sauce and onion. Down here, your call.

From Maryland, with beef

Halo and Greg Ledwell moved from Maryland to Central Florida about two years ago and kept running into the same problem: nobody down here was making pit beef.

So they built a truck and started making it themselves. Ledwell's is family-run, and the rules on the truck are short. Work hard. Cook it right. Treat people like neighbors. As Halo and Greg put it, great service builds friendships, and great food keeps people coming back.

They rolled out at the Manatee Festival in January 2026. Since then the smoke has been at breweries, markets, and street corners across Volusia and Flagler counties, with more Maryland favorites on the way.
